- 1 1/2 lbs ground turkey
- 1 clove garlic
- 1 1/2 cups soft bread crumbs
- 1 1/2 cups finely chopped onions
- 1/4 tsp rosemary, crumbled
- 1/2 tsp oregano, crushed
- 1/4 cup fresh parsley, chopped
- 1/2 cup toasted pine nuts (optional)
- 3/4 cup diced Valley Sun Products, Inc. Sun Dried Tomatoes
- 1/3 cup grated Romano or Parmesan cheese
- 2 eggs, beaten
- 1/4 cup red wine
- 1/4 cup catsup
- 8 oz shredded Mozzarella cheese
In large bowl, combine all ingredients except Mozzarella cheese. Season with salt and pepper to taste. Place in greased loaf pan or a greased baking pan and shape to desired shape. Bake at 375 degrees for about 50 minutes. Remove from oven, top with shredded cheese. Return meatloaf to oven and bake an additional 10 to 15 minutes or until cheese has melted.
