We are very picky about our tomatoes!

Once the tomatoes are sorted they pass through a metal detector before they are off to the cutting machine. The cut tomatoes are then placed on drying racks.

Workers make sure that the cut side of the tomato is up!This will ensure that the tomatoes dry properly in the sun. The face up tomatoes continue down the line to be dried.
